  • 1 ¾ cups (250g) all-purpose flour
  • ⅔ cup (56g) cocoa powder
  • ¾ teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 ½ cups (300g) granulated sugar
  • ¾ teaspoon fine table salt
  • 2 large eggs
  • ½ cup (120ml) vegetable oil
  • ¾ cup (180ml) full fat sour cream
  • 1 teaspoon (5ml) pure vanilla extract
  • 1 cup (240ml) hot coffee

Instructions

  1. Preheat the oven to 350°F and line a standard 12-cup muffin pan with paper liners. You can also prepare a loaf pan with liners for extra cupcakes if needed.
  2. Prepare the coffee and keep it hot. For instant coffee, mix 1 tablespoon of granules with 1 cup of boiled water and set aside.
  3. In a large bowl, sift together flour, cocoa powder, baking powder, and baking soda. Add granulated sugar and salt, and whisk until well combined.
  4. In a medium bowl, whisk together eggs, vegetable oil, sour cream, and vanilla. Make a well in the center of the dry ingredients and pour in the wet mixture. Mix with an electric mixer on medium-low speed until just combined.
  5. Gradually add the hot coffee in two stages, mixing until the batter is smooth and thin. Do not over-mix.
  6. Divide the batter among the prepared liners, filling each no more than two-thirds full. Tap the pans on the countertop to remove air bubbles.
  7. Bake for 16-20 minutes, or until a skewer inserted into the center comes out clean. Allow to cool on a wire rack for 15 minutes before transferring to finish cooling.
