Instructions

- Scoop the mixture and roll it into small bite-sized balls.
- Arrange the balls on a parchment-lined tray and refrigerate for at least 1 hour.
- Melt chocolate in a microwave or a double boiler until smooth, stirring often.
- Dip each cheesecake bite into the melted chocolate until fully coated.
- Return the coated bites to the parchment paper and allow the chocolate to set.
- Refrigerate until firm and serve chilled.
