- 1 cup Dark chocolate chips (I use these sugar-free ones; divided into 3/4 cup and 1/4 cup)
- 1 tsp coconut oil
- 1 cup Blueberries (completely dry, at room temperature)
- 1 tbsp chopped almonds (optional)
- 1/4 cup white chocolate chips (optional; I use these sugar-free ones)
Instructions
- Line a small baking sheet with parchment paper.
- In a microwave-safe medium bowl, combine 3/4 of the dark chocolate chips and coconut oil. Heat at 50% power in the microwave or over simmering water, stirring occasionally until completely melted.
- Once melted, stir in the remaining 1/4 of the chocolate chips until smooth.
- Quickly add the blueberries, stirring gently to coat them in chocolate.
- Spoon clusters of blueberries onto the prepared parchment paper.
- If desired, sprinkle chopped almonds on top of the clusters before the chocolate sets.
- Allow the chocolate covered blueberries to cool at room temperature or refrigerate if not eating within 2 hours.
- For a decorative touch, melt the white chocolate chips and drizzle over the clusters, then let them cool to set.
