  • ¼ cup packed brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon kosher salt
  • ¼ cup butter melted
  • ½ cup milk chocolate chips
  • pure maple syrup

Instructions

  1. Prepare chocolate chip pancakes, each about three inches wide.
  2. Spray a 9 x 13 casserole dish with baking spray and layer the pancakes in three rows until full.
  3. In a large bowl, whisk the eggs, heavy whipping cream, milk, brown sugar, and vanilla until smooth.
  4. Pour the egg mixture over the pancakes, ensuring they are well covered. Cover with plastic wrap and refrigerate for at least 8 hours or overnight.
  5. Preheat the oven to 350 degrees F when ready to bake.
  6. Mix together pecans, flour, brown sugar, cinnamon, and salt in a small bowl. Stir in melted butter until combined.
  7. Remove plastic wrap and evenly sprinkle the streusel mixture over the top of the casserole.
  8. Bake uncovered for 50 minutes, or until the center is set.
  9. Let the casserole stand for 5 to 8 minutes, then garnish with chocolate chips and serve with pure maple syrup.
