- 1 large avocado ripe, cubed
- 1 tablespoon lemon juice freshly squeezed
- ½ cup plain greek yogurt full-fat or low-fat
- ½ teaspoon garlic powder or 1 small minced garlic clove
- 1½ cups cooked chicken diced or shredded, preferably rotisserie
- ½ cup shredded monterey jack cheese mild flavor
- ½ teaspoon salt adjust to taste
- ¼ teaspoon black pepper freshly ground
- ¼ cup grape tomatoes halved
- 1 cup fresh spinach leaves washed and dried
- 3 spinach tortillas or any soft tortilla of choice, 8-inch size
Instructions
- Mash the avocado and lemon juice together in a medium bowl until smooth.
- Stir in the Greek yogurt, garlic powder, salt, and pepper until evenly combined.
- Fold in the cooked chicken and shredded cheese gently.
- Place about one-third of the filling in the center of a tortilla.
- Top the filling with one-third of the grape tomatoes and one-third of the spinach leaves.
- Fold in the sides of the tortilla and roll tightly to enclose the filling. Secure with a toothpick if needed.
- Repeat the assembly process with the remaining tortillas and filling.
