Instructions
- Grate zucchini and squeeze out excess moisture using a clean towel.
- In a bowl, combine zucchini, eggs, flour, cheese, salt, pepper, and garlic powder.
- Mix until well combined.
- Heat oil in a skillet over medium heat.
- Scoop mixture into the pan and flatten into fritters.
- Cook for 3–4 minutes on each side until golden and crispy.
- Remove and place on paper towels to drain excess oil.
- Serve warm.
