- Crack the eggs into a medium bowl and whisk until fully combined.
- Add a pinch of salt to the eggs and whisk again. Set the mixture aside.
- Heat an 8-inch nonstick skillet over medium heat and add ½ tablespoon of butter.
- Once the butter has melted, ensure it coats the skillet evenly, then pour in the eggs.
- Avoid stirring the eggs initially; let them sit for 10–15 seconds to form curds. Use a spatula to lift the edges and push the curds towards the center, allowing uncooked egg to fill the spaces.
- Sprinkle the cheddar cheese evenly over the eggs.
- When the eggs are nearly set and the cheese has melted, fold the omelette in half with a spatula and cook for an additional 30 seconds.
- Add the remaining butter to the skillet along the folded edge of the omelette.
- Gently shake the skillet to loosen the omelette, then carefully tip it onto a plate.
- Garnish with chives, if desired, and serve.
