  • 2 eggs lightly beaten
  • 1/2 cup neutral cooking oil
  • 1/4 cup milk
  • 1 tablespoon spicy brown mustard
  • 1 cup shredded cheddar cheese (4 ounces)
  • 1/4 cup thinly sliced green onions

Instructions

  1. Preheat the oven to 350ºF. Spray a 9×5-inch loaf pan with nonstick cooking spray or line it with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, cracked black pepper, baking powder, salt, and baking soda until combined.
  3. In another bowl, mix the yogurt, eggs, oil, milk, and spicy brown mustard until well blended.
  4. Pour the wet mixture into the dry ingredients and mix until mostly combined. Fold in the shredded cheddar cheese and sliced green onions until just combined.
  5. Transfer the batter into the prepared loaf pan and spread evenly.
  6. Bake for 45-50 minutes, or until a tester inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then remove it and let it cool completely on a wire rack.
