Ingredients

  • 1 cup (170g) of quinoa, rinsed
  • 2 cups (480ml) of chicken or vegetable stock
  • 120g cheddar, grated
  • 2 large eggs
  • 1 large honeycrisp apple, grated (squeeze excess liquid)
  • 2 spring onions
  • salt and pepper
  • olive oil spray

Instructions

  1. Combine quinoa and stock in a saucepan, bring to a boil, then reduce heat to simmer and cook until all stock is absorbed.
  2. Turn off the heat, cover, and let sit for 15 minutes to steam and soften the quinoa. Allow to cool.
  3. Preheat the oven to 190°C (fan 170°C or 375°F).
  4. In a bowl, mix the cooled quinoa, grated apple, cheddar, spring onions, and beaten eggs. Season with salt and pepper and mix thoroughly.
  5. Shape the mixture into 21 bites and place on a baking tray lined with parchment paper. Lightly spray tops with olive oil spray.
  6. Bake for 25 to 30 minutes until firm and lightly golden.
  7. Serve warm or at room temperature.
