- 1 cup (170g) of quinoa, rinsed
- 2 cups (480ml) of chicken or vegetable stock
- 120g cheddar, grated
- 2 large eggs
- 1 large honeycrisp apple, grated (squeeze excess liquid)
- 2 spring onions
- salt and pepper
- olive oil spray
Instructions
- Combine quinoa and stock in a saucepan, bring to a boil, then reduce heat to simmer and cook until all stock is absorbed.
- Turn off the heat, cover, and let sit for 15 minutes to steam and soften the quinoa. Allow to cool.
- Preheat the oven to 190°C (fan 170°C or 375°F).
- In a bowl, mix the cooled quinoa, grated apple, cheddar, spring onions, and beaten eggs. Season with salt and pepper and mix thoroughly.
- Shape the mixture into 21 bites and place on a baking tray lined with parchment paper. Lightly spray tops with olive oil spray.
- Bake for 25 to 30 minutes until firm and lightly golden.
- Serve warm or at room temperature.
