This Char Siu Pork features succulent pork shoulder marinated in a flavorful blend of spices, soy sauce, and hoisin, making it an ideal dish for a quick dinner or a comforting meal at home.

Ingredients

  • 2 tsp garlic powder
  • 1.5 tsp Chinese five spice
  • ¼ tsp white pepper
  • 3 tbsp low sodium soy sauce light or all-purpose
  • 5 tbsp (50g) light brown sugar
  • 3 tbsp hoisin sauce
  • 2 tbsp rice wine shaoxing
  • 1/4–1/2 tsp red food gel optional
  • 1 kg (2.2lbs) boneless, rindless, pork shoulder joint
  • 2 tbsp hoisin sauce
  • 2 tbsp honey
  • 2 tbsp water

Instructions

  1. In a large bowl, mix together the marinade ingredients completely.
  2. Chop the pork into smaller pieces, approximately 250g each, cutting with the grain.
  3. Stab the pork pieces multiple times all over with a fork to tenderize and help the marinade absorb better.
  4. Combine the pork with the marinade, ensuring each piece is thoroughly coated.
  5. Cover the bowl with cling film and refrigerate for a minimum of 4 hours, ideally up to 24 hours.
  6. Before cooking, remove the pork from the refrigerator about an hour to allow it to reach room temperature.
  7. Preheat the oven to 190C/375F (fan), and line a baking tray with foil, placing a wire rack on top. Add a cup of boiling water to the tray.
  8. Place the marinated pork on the wire rack and bake for 15 minutes.
  9. Prepare the basting mixture, brush 1/3 of it over the pork and continue baking for another 15 minutes.
  10. Brush half of the remaining baste on the pork and repeat baking for another 15 minutes.
  11. For a final char, brush the remaining baste over the pork, increase the oven temperature to 230C/450F (fan), and bake for an additional 10 minutes or use a broiler for 2-3 minutes until charred. Note: If the pork is charred on top, turn it over, baste, and cook the final 10 minutes.
  12. Allow the pork to rest for 10 minutes before slicing and serving.

Notes
