- 2 cups finely diced apples, Granny Smith or Honeycrisp
- 2 tablespoons butter
- 3 tablespoons packed brown sugar
- 1 teaspoon vanilla extract
- 1 ½ teaspoons chai spice blend
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1 pinch salt
- 1 cup all-purpose flour
- ¾ cup rolled oats
- ½ cup packed brown sugar
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 ½ teaspoons chai spice blend
- ¼ teaspoon salt
- 1 ¼ cups fine almond flour
- ¾ cup certified gluten-free rolled oats
- ½ cup packed brown sugar
- 2 tablespoons pure maple syrup or granulated sugar
- ½ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 ½ teaspoons chai spice blend
- ¼ teaspoon salt
Instructions
- Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides.
- In a medium saucepan over medium heat, melt the butter and stir in the apples, brown sugar, vanilla extract, chai spice blend, cornstarch, water, and salt. Cook for about 5 to 7 minutes until the apples begin to soften. Set aside to cool.
- In a large bowl, mix all-purpose flour, rolled oats, packed brown sugar, granulated sugar, melted unsalted butter, vanilla extract, chai spice blend, and salt together.
- In a separate bowl, combine fine almond flour, certified gluten-free rolled oats, packed brown sugar, maple syrup, melted butter, vanilla extract, chai spice blend, and salt. Stir until well combined.
- Press half of the oat mixture into the bottom of the prepared baking pan. Spread the cooked apple mixture on top of the oat base. Crumble the remaining oat mixture over the apples.
- Bake for 30 to 35 minutes until the top is golden brown and the filling is bubbly. Allow to cool before slicing into bars.
