- 3/4 cup granulated sugar
- 1/2 cup brown sugar

- 3/4 cup vegetable oil

- 2 cups finely grated carrots
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup raisins (optional)
Instructions
- Preheat the oven to 350°F (175°C) and prepare a baking pan by greasing or lining it.
- In a mixing bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, combine granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
- Gradually incorporate the dry mixture into the wet ingredients and mix until just combined.
- Gently fold in the grated carrots along with any optional nuts or raisins.
- Pour the batter into the prepared baking pan, spreading it out evenly.
- Bake in the preheated oven for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, allow the bars to cool completely before cutting them into squares.

You can use either walnuts or pecans for added crunch, or skip them if preferred.
Raisins add a nice sweetness, but are completely optional and can be omitted if desired.
