Caramel Pork is a delicious dish that combines the sweetness of caramelized sugar with tender pork. With simple ingredients like pork shoulder, garlic, and lemongrass, this recipe is perfect for a satisfying and quick dinner that will delight your taste buds.

  • Total Time: 0 hours
  • Yield: 4 servings 1x

Ingredients

Scale
  • 100 g (1/2 cup) white sugar
  • 1 tbsp water
  • 1 kg (2.2lb) pork shoulder chopped into 1-inch chunks
  • 480 ml (2 cups) water
  • 1 tbsp light soy sauce
  • 2 tbsp fish sauce
  • 1 medium onion peeled and thinly sliced
  • 4 cloves garlic peeled and minced
  • 2 tsp lemongrass paste (or two lemongrass stalks, outer leaves removed and centre stalk thinly sliced)
  • ¼ tsp salt
  • ¼ tsp white pepper
  • 6 kaffir lime leaves roughly torn

Instructions

  1. Combine sugar and 1 tablespoon of water in a large heavy-based pan over medium heat. Stir and cook for 3-5 minutes until bubbling and light golden brown.
  2. Add the chopped pork into the sugar mixture and cook for 5 minutes, stirring frequently.
  3. Incorporate the rest of the ingredients, stir well, and bring to a simmer. Reduce heat to low and let it simmer gently (without a lid) for about 1 hour 15 minutes to 1 hour 30 minutes, stirring occasionally, until the pork is fork-tender.
  4. During cooking, the liquid will evaporate and the pork will caramelize. If needed, add a little water or oil to prevent sticking or burning.
  5. For extra sauce to pour over rice, add a couple of splashes of water near the end of the cooking time and stir well before serving.
  6. Serve the caramel pork with rice and your choice of green vegetables, like grilled spring onions.

Notes

For a richer flavor, consider marinating the pork shoulder in soy sauce and garlic for a few hours before cooking.
This dish pairs beautifully with Jasmine rice or steamed vegetables for a complete meal.
Adjust the level of fish sauce according to your taste preference for a saltier or milder dish.
