  • 1 sheet puff pastry gluten-free or regular, thawed but still cold
  • 1 medium crisp apple such as honeycrisp or pink lady
  • 1 tablespoon melted butter divided; regular or dairy-free
  • 1 tablespoon brown sugar or coconut sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons prepared caramel sauce for finishing
  • Flaky sea salt optional

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Unroll the cold puff pastry sheet onto the baking sheet, maintaining its rectangle shape.
  3. Using a sharp knife, lightly score a border about 3/4 inch in from the edges all around, making sure not to cut through. Prick the center portion several times with a fork, leaving the scored border untouched.
  4. Core the apple, keeping the peel on for color. Slice it in half vertically, then cut into thin 1/8-inch pieces.
  5. In one bowl, combine sugar, cinnamon, and salt. In another bowl, mix 2 teaspoons of the melted butter with the vanilla extract.
  6. Lightly brush the vanilla butter over the center of the pastry. Arrange the apple slices in overlapping rows across the center, keeping the border clear.
  7. Brush the apples with the remaining melted butter and sprinkle evenly with the cinnamon sugar. Brush a little butter on the exposed pastry border as well.
  8. Bake for 22 to 28 minutes, until the border is puffed and golden, and the apples are tender with caramelized edges.
  9. Allow the tart to cool for 5 minutes before drizzling with caramel sauce. Sprinkle with a pinch of flaky sea salt, if desired, and slice into squares.
