Ingredients

  • 18 oz. lean ground beef (85 to 93%)
  • Salt and black pepper, to taste
  • Avocado oil cooking spray or olive oil cooking spray
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 3/4 to 1 cup bottled salsa*
  • 1 (14.5 oz) can pinto beans, rinsed and drained
  • 5 (10-inch) flour tortillas (preferably Sonora/Northern Mexico style), warmed if needed to make more pliable
  • 1 2/3 cups Monterey jack pepper jack, or cheddar cheese (or use a blend)

Instructions

  1. Heat a 12-inch non-stick skillet over medium-high heat, then spray with cooking spray. Add ground beef, season with salt and pepper, and sear until browned (about 3 minutes).
  2. Turn the beef, allowing it to cook a few more minutes, then break it into smaller pieces and cook through. Drain any fat from the beef, then stir in the spices and cook for another 30 seconds.
  3. Add salsa and rinsed beans, simmer over medium-low heat until most of the liquid evaporates (about 2 minutes). Cool for 15 minutes if planning to freeze the filling.
  4. To assemble, lay a tortilla flat and place 1/3 cup of cheese in the center. Add over 3/4 cup of the beef filling on top of the cheese.
  5. Fold the sides of the tortilla inward and then roll it tightly from one end to the other. Repeat with the remaining tortillas, filling, and cheese.
  6. To toast, clean the skillet, heat it over medium heat, and spray with cooking spray. Cook 2-3 burritos at a time, browning on all sides with tongs.
  7. Serve immediately, adding your favorite toppings like guacamole, sour cream, Mexican hot sauce, or pico de gallo.
