- 2 8-inch flour tortillas or corn tortillas
- 4 large eggs
- 4 oz breakfast sausage, bacon, ham, or any other breakfast meat
- ½ cup shredded cheddar cheese
- 2 teaspoons olive oil
Instructions
- Cook the breakfast meat in a skillet until browned, breaking it into small pieces if necessary.
- Whisk the eggs in a bowl until well blended.
- Once the meat is cooked, pour the eggs into the skillet and cook over medium heat. Stir frequently until the eggs are mostly set, then mix the cooked meat back in and remove from heat.
- On each tortilla, add a thin layer of cheese, followed by half of the egg mixture and the remaining cheese. Fold the tortillas in half.
- Heat a skillet or grill over medium-high heat. Brush the outside of each quesadilla with olive oil. Cook for 3-4 minutes on each side until crispy and the cheese has melted.
- Remove from heat, slice into pieces, and serve with salsa, guacamole, sour cream, or your preferred hot sauce.
