  • 3½ cups all-purpose flour
  • 1 large egg room temperature
  • 6 tablespoons unsalted butter softened, cubed

  • ½ teaspoon salt
  • Oil for frying
  • 1 cup milk
  • 2 egg yolks
  • 1 tablespoon cornstarch
  • ¼ cup granulated sugar
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • 4 ounces semisweet chocolate chips
  • â…“ cup heavy cream

Instructions

  1. In a large bowl, combine warm water, warm milk, sugar, and yeast. Whisk to dissolve and let proof for about 5 minutes until foamy.
  2. Add flour, egg, butter, baking powder, and salt. Knead on low speed with a dough hook or by hand for about 5 minutes until smooth.
  3. Transfer the dough to a greased bowl, cover with plastic wrap, and let rise in a warm place until nearly doubled in size, about 1 hour.
  4. Punch down the dough and roll it out on a floured surface to 1/2-inch thick. Use a 3-inch round cutter to cut out the donuts. Place them on a floured parchment-lined baking sheet, cover with plastic wrap, and let proof for 15 minutes.
  5. Heat 2 inches of oil in a heavy pot to 350-360°F. Fry 2-3 donuts at a time, cooking until golden, about 2 minutes per side.
  6. Remove from oil and place on a paper towel-covered wire rack to cool completely before filling.
