  • 1 to 2 tablespoons maple syrup
  • 1 teaspoon lemon zest
  • 1 tablespoon water
  • pinch of salt
  • 2 cups rolled oats
  • 2 cups milk of choice
  • 1 cup greek yogurt or blended cottage cheese
  • 4 scoops vanilla or peanut butter protein powder
  • 2 tablespoons chia seeds
  • 2 teaspoons vanilla extract
  • 1 to 2 tablespoons maple syrup (optional)
  • ½ to 1 teaspoon cinnamon (optional)
  • ½ cup fresh blueberries
  • ½ cup fresh raspberries

Instructions

  1. In a small saucepan, combine 1 1/2 cups blueberries, 1 to 2 tablespoons of maple syrup, 1 teaspoon of lemon zest, 1 tablespoon of water, and a pinch of salt.
  2. Cook over medium heat for 5 to 7 minutes until the berries break down and the mixture becomes thick and jammy, stirring occasionally.
  3. Allow the blueberry swirl to cool completely before layering it with the oats mixture.
