Instructions
- Combine 4 cups of blueberries, 1 ½ cups of sugar, lemon zest, lemon juice, and a pinch of salt in a medium saucepan over medium-high heat.
- Stir frequently and bring the mixture to a boil.
- Once boiling, reduce heat to low and let it simmer for 7 to 10 minutes, stirring occasionally and gently crushing some blueberries, until slightly thickened and a digital thermometer reads 220°F.
- Allow to cool for 5 minutes in the saucepan before transferring to jars.
- After cooling, let the jars reach room temperature before sealing and storing in the refrigerator. The jam can be consumed immediately but may take up to 48 hours to fully set.
