- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups blueberries (fresh or frozen)
- 1/3 cup sugar (for topping)
- 1 tbsp lemon juice
- 1 tbsp cornstarch + 2 tbsp water
Instructions
- Preheat oven to 325°F (160°C) and line a baking pan with parchment paper.
- Combine crushed biscuits with melted butter and optional sugar, then firmly press into the base of the pan.
- Beat cream cheese until smooth and creamy. Gradually mix in sugar, eggs, and vanilla extract until blended well.
- Pour the cream cheese mixture over the crust, ensuring an even distribution.
- In a small saucepan, cook blueberries with sugar and lemon juice until they soften.
- Stir in the cornstarch mixture and cook until it thickens slightly; allow to cool a bit.
- Spoon the blueberry topping over the cheesecake layer, spreading it evenly.
- Bake for 30–35 minutes until the filling is set and firm in the center.
- Let cool at room temperature before transferring to the refrigerator to chill for at least 2–3 hours.
- Once chilled, slice into bars and serve.
