  • 12 oz pasta (rotini or penne)
  • 12 cups chicken sausage (sliced and cooked)
  • 1 cup cherry tomatoes (halved)
  • 2 cups romaine lettuce (chopped)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • optional: 1 cup cucumber (chopped)
  • optional: 1/2 cup shredded cheese

Instructions

  1. Cook pasta in salted boiling water until al dente, then drain and rinse with cold water.
  2. Slice and cook chicken sausage in a skillet until golden and slightly crispy, then let cool.
  3. In a bowl, whisk together mayonnaise, sour cream or Greek yogurt, lemon juice, garlic powder, salt, and pepper.
  4. In a large bowl, combine cooled pasta, chicken sausage, cherry tomatoes, and romaine lettuce.
  5. Add optional ingredients like cucumber or cheese if desired.
  6. Pour the dressing over the salad and toss gently to coat evenly.
  7. Refrigerate for at least 30 minutes before serving.
  8. Stir gently before serving and adjust seasoning if needed.
