  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons avocado oil (or another high smoke point oil)
  • optional: fresh lemon and parsley

Instructions

  1. Pat the shrimp dry with paper towels and set aside.
  2. In a small bowl, combine paprika, garlic powder, onion powder, cayenne, thyme, oregano, salt, and black pepper.
  3. Coat the shrimp in the seasoning, ensuring every piece is fully covered.
  4. Heat a cast iron skillet on medium-high until it reaches 375°F to 400°F; it’s ready when water droplets sizzle.
  5. Add the oil and allow it to shimmer.
  6. Arrange the shrimp in a single layer in the skillet, leaving space between each one, and cook for 2 minutes without moving them.
  7. Flip the shrimp and cook for an additional 2 minutes until they are opaque and curled into a loose C shape; they should reach 120°F to 125°F.
  8. Remove the shrimp from the skillet and serve immediately with fresh lemon and chopped parsley if desired.
