Instructions
- In a small, heavy saucepan, heat the cream and vanilla extract until bubbles form at the edges.
- While the cream heats, whisk the egg yolks and sugar together until smooth.
- Slowly pour 1/2 cup of the hot cream mixture into the egg yolks while whisking constantly.
- Gradually add the egg yolk mixture back to the saucepan with the remaining cream, continuing to whisk constantly.
- Cook the mixture, stirring until it thickens and coats the back of a spoon.
- Plate the fresh berries and drizzle the creme anglaise over the top.
- Serve warm or chilled.
