Ingredients
- 5-oz Barramundi fillets (thawed if frozen)
- 1 tsp Sea salt
- 1/4 tsp Black pepper
- 2 tbsp Olive oil
- 2 tbsp Unsalted butter
- 1 large Red onion (sliced into thin half moons)
- 2 cloves Garlic (minced)
- 2 cups Cherry tomatoes
- 1 cup Olives (pitted; mix of black and green)
- 1 tbsp Lemon juice
- 1/2 cup Fresh basil (cut into ribbons; divided)
- 1/3 cup Feta cheese (diced or crumbled; optional)
Instructions
- Pat the Barramundi fillets dry with paper towels, then season both sides with sea salt and black pepper.
- In a large nonstick skillet, heat the olive oil over medium-high heat until shimmering. Place two of the fillets in the skillet, presentation side down, and sear for 2-4 minutes until golden brown.
- Flip the fillets and cook for an additional 1-3 minutes until golden, ensuring the internal temperature reaches 135-140°F (57-60°C). Transfer the cooked fillets to a plate and cover them to keep warm. Repeat this step with the remaining two fillets.
- In the same skillet, add the unsalted butter and allow it to melt. Then, add the sliced red onion and cook for about 5 minutes until translucent and starting to brown.
- Add the minced garlic and cook for about 1 minute until fragrant.
- Stir in the cherry tomatoes, pitted olives, lemon juice, and half of the basil ribbons. Cover the skillet with a lid and cook for 5-6 minutes until the tomatoes soften and begin to pucker.
- Return the seared fish to the skillet and spoon the tomato and olive mixture over the top. Garnish with the remaining fresh basil, crumbled feta cheese (if using), and extra lemon wedges to squeeze over the dish.
