- 1 zucchini thinly sliced
- 1 red bell pepper thinly sliced
- 1 lb flaky white fish without skin such as tilapia, haddock, or flounder
- 1 tablespoon extra virgin olive oil
- pinch salt
- 2 lemons thinly sliced
- ½ cup sugar snap peas
Instructions
- Preheat the oven to 350°F.
- On one side of a large sheet of parchment paper, layer half the thinly sliced zucchini and red bell pepper. Place a piece of rinsed and patted dry white fish on top. Lightly brush with olive oil and season with salt. Add half of the thinly sliced lemons and tuck sugar snap peas on the sides.
- Fold the parchment paper over the fish and vegetables, rolling up the edges to seal tightly into a pouch to trap the steam.
- Place the parchment pouch onto a baking sheet and bake for 16-18 minutes at 350°F. Serve warm.
