- 3 cups old fashioned oats
- 2/3 cup roughly chopped pecans
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 1/4 teaspoon nutmeg
- 1 3/4 cup milk
- 1/3 cup maple syrup
- 2 eggs
- 1/4 cup melted butter
- 1/4 cup greek yogurt
- 2 teaspoons vanilla
- 12 oz fresh berries
- Yogurt or whipped cream for serving optional
Instructions
- Preheat the oven to 350ºF and prepare a 9-inch baking dish by greasing or lining it.
- In a large bowl, combine old fashioned oats, pecans, cinnamon, baking powder, salt, and nutmeg.
- Add milk, maple syrup, eggs, melted butter, Greek yogurt, and vanilla to the dry ingredients. Mix thoroughly until well combined.
- Reserve 1/2 cup of fresh berries, then fold the remaining berries into the oatmeal mixture.
- Pour the mixture into the prepared baking dish, then top with the reserved berries.
- Bake for 35-40 minutes or until the center is set. Let cool for about 10 minutes before serving.
- Serve warm with a dollop of yogurt or whipped cream if desired.
