  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 2 tablespoons minced dill pickles
  • 2 teaspoons yellow mustard
  • 1 teaspoon white vinegar
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 pound bacon, diced
  • 1 pound ground beef
  • 2 tablespoons ketchup
  • 2 tablespoons yellow mustard
  • 1/2 tablespoon Worcestershire sauce
  • 1 tablespoon butter
  • 4 8 to 9-inch flour tortillas
  • 6 oz shredded cheddar cheese
  • Shredded lettuce and diced tomatoes (optional)

Instructions

  1. In a bowl, mix all sauce ingredients and whisk well; refrigerate until needed.
  2. Cook bacon in a large skillet until crisp; remove with a slotted spoon and drain grease, leaving about 1 tablespoon in the skillet.
  3. Add ground beef to the skillet and cook until browned, breaking it up as it cooks.
  4. Stir in cooked bacon, ketchup, mustard, and Worcestershire sauce; heat through for a few minutes.
  5. Heat another skillet over medium, melt half the butter, and place one tortilla in the pan. Sprinkle cheese on one half, add 1/4 of the beef mixture, and top with more cheese. Fold the tortilla and move it to one side of the skillet. Repeat with another tortilla and filling to cook two at a time.
  6. Cook until golden brown, and cheese melts; flip each quesadilla and cook until the second side is browned. Remove from skillet and repeat with remaining ingredients.
  7. Slice each quesadilla into triangles, serve with lettuce, tomato, and the special sauce.
