- 3 pounds yukon gold or red potatoes
- 1 medium sweet or yellow onion
- 3 tablespoons butter
- 3 tablespoons flour
- 2 cups whole milk
- 1 teaspoon ground dry mustard
- 1 cup sharp cheddar cheese, shredded
- ½ cup gruyere or swiss cheese, shredded
- salt, to taste
- ground black pepper, to taste
Instructions
- Preheat oven to 400°F (200°C). Grease a 3 quart casserole dish with non-stick cooking spray and set aside.
- Scrub the potatoes and pat them dry with paper towels. Slice each potato into 1/8" thin slices using a sharp knife or mandoline slicer.
- Cut the onion in half, place the flat side down, and slice as thinly as possible.
- Layer the potato and onion slices in the prepared casserole dish.
- In a medium saucepan, melt the butter. Whisk in the flour and cook for 1-2 minutes.
- Slowly whisk in the milk and ground dry mustard. Season with salt and pepper. Continue whisking over medium heat until the mixture thickens and bubbles.
- Remove from heat and stir in the shredded cheeses until melted.
- Pour the cheese sauce over the layered potatoes and onions.
- Spray foil with non-stick cooking spray and cover the baking dish. Bake for 60 minutes.
- Remove the foil and bake for an additional 20-30 minutes until bubbly and golden brown on top.
- Let sit for 15 minutes before serving.
