  • 1 package ramen noodles (uncooked, crushed)
  • 11 ounce can mandarin oranges (small can, drained)
  • ½ cup slivered almonds (heaping)
  • 2 tablespoons sesame seeds
  • 3 green onions (chopped)
  • 1 can water chestnuts (small can)
  • 34 sprigs chopped cilantro (optional garnish)
  • ⅔ cup vegetable oil (avocado or olive oil)
  • ½ cup rice vinegar or white wine vinegar
  • 2 teaspoons soy sauce (tamari, bragg’s liquid aminos, or gf soy)
  • 2 tablespoons sugar (natural cane sugar)
  • 2 tablespoons light brown sugar (packed)
  • 1 tablespoon toasted sesame oil
  • 1 cup favorite protein (such as rotisserie chicken, shrimp, steak, salmon, or tofu)
  • 2 tablespoons roasted cashews (optional garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded cabbage.
  3. Add crushed ramen noodles, mandarin oranges, slivered almonds, sesame seeds, green onions, water chestnuts, and cilantro (if using).
  4. In a separate bowl, whisk together the vegetable oil, rice vinegar, soy sauce, sugar, light brown sugar, and toasted sesame oil to create the dressing.
  5. Pour the dressing over the salad mixture and toss gently until well combined.
  6. Add your favorite protein to the salad and mix again lightly.
  7. Garnish with roasted cashews, if desired. Serve immediately or chill before serving.
