  • 3 tablespoons maple syrup divided
  • 1 teaspoon vanilla extract
  • ½ cup rolled oats
  • 2 tablespoons chia seeds
  • 1 teaspoon ground cinnamon divided
  • 1 ½ cups apple peeled and diced

Instructions

  1. In a saucepan over medium heat, combine apples with 1 tbsp maple syrup and ½ tsp cinnamon. Add a splash of water if needed for crisper apple varieties.
  2. Cook for 5-7 minutes, stirring frequently until the apples soften.
  3. Cool the mixture and store in an airtight container until ready to use.
  4. In a mixing bowl, combine oat milk, 2 tbsp maple syrup, vanilla extract, ½ tsp cinnamon, and a pinch of salt. Whisk until blended.
  5. In 1 cup or larger jars, add ¼ cup rolled oats and 1 tbsp chia seeds to each container.
  6. Evenly distribute the milk mixture between containers and stir well. Let sit for 10 minutes to thicken slightly, then stir again.
  7. Cover and refrigerate for at least 8 hours or overnight. Serve topped with the cooked apples.
