  • ¾ cup (180ml) whole milk
  • 3 cups (330g) peeled and diced apples, cut into small ¼-inch cubes
  • 2 teaspoon (8g) granulated sugar
  • 2 teaspoon (6g) all-purpose flour
  • ¼ teaspoon ground cinnamon
  • ¼ cup (56g) salted butter, browned and warm
  • ¼ cup (60ml) whole milk
  • 2 cups (240g) powdered sugar
  • 2 tablespoons (30ml) full fat greek yogurt or sour cream
  • â…› teaspoon salt
  • 1 tablespoon (12g) granulated sugar
  • ½ teaspoon ground cinnamon

Instructions

  1. Prepare a 13×18-inch or 17¼ × 12¼-inch half sheet pan by spraying with cooking spray or greasing with butter and lining with parchment paper. Preheat the oven to 350°F.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. Create a well in the center of the dry ingredients and add the eggs, oil, yogurt, and vanilla. Mix gently with a whisk until slightly combined.
  4. In a small saucepan, heat the butter and milk over medium until butter melts. Pour this warm mixture into the batter and whisk until smooth.
  5. In a medium bowl, combine diced apples, sugar, flour, and cinnamon. Toss to coat apples and fold them into the batter gently.
  6. Pour the batter into the prepared pan and bake for 25-30 minutes until golden brown. Let cool for 20-30 minutes on a wire rack.
  7. To prepare the icing, brown the butter in a saucepan over medium heat, then transfer it to a bowl. Mix in the milk, powdered sugar, yogurt, and salt until smooth.
  8. Drizzle the glaze over the slightly warm cake. Allow the glaze to set for about 15 minutes, and sprinkle with additional cinnamon sugar if desired.
