- 2 cans white beans, drained and rinsed
- 1 can sweet corn, drained
- 2 chicken breasts, cooked and shredded
- Toppings: diced avocado, tomatoes, cheddar cheese, sour cream, cilantro, lime wedges, tortilla chips
Instructions
- Heat olive oil in a large pot over medium-low heat.
- Add diced onions and minced garlic; sauté for about 7 minutes.
- Sprinkle flour over the veggies; stir for 2 minutes.
- Increase heat to medium-high; whisk in chicken broth gradually.
- Lower heat to low and add spices; stir well.
- Add low-fat milk, white beans, sweet corn, and shredded chicken; mix thoroughly.
- Serve in bowls and garnish with desired toppings.
