- 2 cups (250g) all-purpose plain flour, or bread flour plus more for dusting
- ⅔ cup (160g) warm water
- 2 ½ teaspoons instant dry yeast
- 2 tablespoons extra virgin olive oil, or substitute with more water
- 1 teaspoon sugar (optional, for quicker rising)
- ½ teaspoon salt
- ⅓ cup (75g) tomato pizza sauce
- 1 tablespoon dried mixed Italian herbs
- 1 cup (115g) vegan mozzarella-style cheese (optional)
- ½ cup (60g) red capsicum (bell pepper), finely chopped
- ½ cup (50g) mushrooms, finely chopped
- ½ cup (15g) baby spinach leaves, finely chopped
- ¼ cup (30g) sun-dried tomatoes, finely chopped
- 3 tablespoons extra virgin olive oil (for herb oil)
- 2 teaspoons dried mixed Italian herbs (for herb oil)
Instructions
- Combine all dough ingredients in a mixing bowl or stand mixer and knead until smooth.
- Cover and let the dough rise in a warm place for about 30 minutes to an hour until doubled.
- Roll out the dough into a rectangle and spread with pizza sauce and herbs.
- Layer vegetables and cheese, then roll into a tube and slice into pieces.
- Prepare herb oil by mixing herbs with olive oil and brush over rolls.
- Preheat oven to 400°F (205°C). Bake rolls on a lined baking sheet for 15-20 minutes until golden.
- Cool for 5 minutes before serving.
