- ½ cup (125g) warm soy milk
- 3 tablespoons (40g) melted vegan butter
- 2 tablespoons (25g) granulated sugar or coconut sugar
- 1 tablespoon (15g) neutral flavored oil
- 2 teaspoons instant dry yeast
- 1 teaspoon vanilla extract
- ½ teaspoon ground nutmeg
- ½ cup (100g) superfine sugar or coconut sugar
- 1 teaspoon ground cinnamon
- 3 tablespoons melted vegan butter (for coating)
- ½ cup raspberry, strawberry, or your favorite jam
Instructions
- Combine dry ingredients in a bowl.
- Add warm soy milk, melted vegan butter, neutral oil, and vanilla. Mix to form a sticky dough.
- Knead dough until smooth and elastic.
- Let the dough rise in a warm spot for at least 2 hours.
- Roll out the dough and cut into donut shapes.
- Let donuts rise again for 1-2 hours.
- Preheat the air fryer and brush the basket with melted vegan butter.
- Cook donuts for about 10 minutes until golden brown.
- Dip warm donuts in melted vegan butter followed by cinnamon sugar.
- Fill each donut with jam using a piping bag.
