- 1 pound raw shrimp peeled and deveined
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic finely minced
- 1/2 teaspoon kosher salt plus more to taste
- 1/4 teaspoon freshly ground black pepper
- 3/4 teaspoon italian seasoning
- 1 teaspoon smoked paprika
- 1/3 cup sun-dried tomatoes oil-packed, drained, sliced
- 1/2 cup dry white wine or chicken broth
- 1 cup heavy cream or half and half
- 1/2 cup parmesan cheese freshly grated
- 1 cup spinach packed, chopped
- 1 tablespoon fresh lemon juice
- red pepper flakes to taste
- fresh basil for garnish
Instructions
- Pat the shrimp dry with paper towels. Heat olive oil and butter in a large skillet over medium heat.
- Add shrimp in a single layer, season with salt and pepper, and cook for 1–2 minutes per side until charred and opaque. Remove from pan and set aside.
- In the same skillet, add garlic and cook for 30 seconds until fragrant. Stir in Italian seasoning and smoked paprika and add the sun-dried tomatoes; cook for another minute.
- Pour in white wine or chicken broth and simmer for 2–3 minutes, scraping up browned bits. Reduce heat and stir in heavy cream and Parmesan, letting it gently simmer for 4–5 minutes until thickened.
- Add spinach and stir until wilted, then return the shrimp to the skillet and warm through. Finish with lemon juice and add red pepper flakes to taste.
- Remove from heat and garnish with fresh basil before serving with spaghetti, rice, mashed potatoes, or crusty bread.
