- 2 cups packed baby spinach
- 1 pound lean ground turkey (99% fat-free)
- 1 egg
- 1 cup fresh bread crumbs
- 3/4 cup ketchup, divided
- 1 tablespoon Worcestershire sauce
- 1/4 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Sauté diced onion for about 5 minutes until tender, then add spinach and cover to wilt.
- Chop spinach mixture and transfer to a mixing bowl.
- Add ground turkey, egg, bread crumbs, 1/4 cup ketchup, Worcestershire sauce, thyme, salt, and pepper, and mix thoroughly.
- Press mixture into a greased loaf pan and spread remaining ketchup on top.
- Preheat oven to 375°F (190°C) and bake for 45-55 minutes, checking the internal temperature.
- Let meatloaf rest for 10 minutes before slicing.
