Instructions
- Heat pan drippings over medium heat in a skillet.
- Add unsalted butter and fresh sage leaves; cook until sage is crispy.
- Remove sage leaves with a slotted spoon.
- Sprinkle flour into the mixture; stir continuously until a roux forms.
- Slowly whisk in the white wine; bring to a boil and let cook for 1 minute.
- Gradually add stock while whisking; simmer until thickened.
- Season with salt and pepper, then serve warm.
