- 1 medium sweet potato, peeled and diced small
- 2 cups kale, chopped (stems removed)
- 6 large eggs
- 1/2 cup milk (any kind)

- 1/4 tsp black pepper
- 2 tbsp feta cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the bacon in an oven-safe skillet until crispy, leaving some grease.
- Sauté shallots and sweet potato for 3-4 minutes until softened.
- Add kale and half of the bacon, sauté for another 1-2 minutes.
- Whisk together eggs, milk, salt, and pepper in a bowl.
- Pour the egg mixture over the vegetables and bacon, sprinkle remaining bacon and feta.
- Cook on the stove for 3-4 minutes until edges begin to set.
- Transfer to the oven and bake for 15-20 minutes until set and golden.
- Garnish with parsley, chives, or green onions before serving.
