Instructions
- Scrub sweet potatoes, prick with a fork, and bake at 425°F for 40-50 minutes.
- Cool slightly, peel sweet potatoes, and reduce oven to 350°F.
- Mix sweet potatoes, milk, eggs, sugar, melted butter, salt, vanilla, and cinnamon until smooth.
- Spread the mixture in a greased 9×13 baking dish.
- In another bowl, mix brown sugar, flour, and pecans. Add softened butter until crumbly.
- Sprinkle the streusel topping over the sweet potato filling.
- Bake for 40-45 minutes until set and golden. Cool for 10 minutes before serving.
