  • 1/4 cup vegetable oil
  • 1 cup granulated sugar
  • 1/3 cup honey
  • 2 large eggs
  • 1 & 1/4 cups buttermilk

Instructions

  • Preheat the oven to 375°F and heat a 9-inch cast iron skillet inside.
  • In a bowl, mix flour, cornmeal, salt, baking soda, and baking powder.
  • Melt the butter in a bowl and reserve a bit for greasing.
  • Add vegetable oil, sugar, and honey to the melted butter; stir well.
  • Mix in eggs and buttermilk until creamy.
  • Fold the dry ingredients into the wet mixture gently.
  • Grease the hot skillet with reserved butter.
  • Pour the batter into the skillet and smooth the top.
  • Bake for 28-32 minutes, checking for doneness.
  • Cool for 5-10 minutes before slicing and serve warm.
