- 1/4 cup vegetable oil
- 1 cup granulated sugar
- 1/3 cup honey
- 2 large eggs
- 1 & 1/4 cups buttermilk
Instructions
- Preheat the oven to 375°F and heat a 9-inch cast iron skillet inside.
- In a bowl, mix flour, cornmeal, salt, baking soda, and baking powder.
- Melt the butter in a bowl and reserve a bit for greasing.
- Add vegetable oil, sugar, and honey to the melted butter; stir well.
- Mix in eggs and buttermilk until creamy.
- Fold the dry ingredients into the wet mixture gently.
- Grease the hot skillet with reserved butter.
- Pour the batter into the skillet and smooth the top.
- Bake for 28-32 minutes, checking for doneness.
- Cool for 5-10 minutes before slicing and serve warm.
