  • 7 cups sliced potatoes (about 45 medium potatoes)

  • 2 cups shredded cheddar cheese
  • 1 cup chicken or vegetable broth

Instructions

  • Preheat oven to 325°F (163°C) and prepare a baking dish with cooking spray.
  • Layer half of the sliced potatoes in the dish, seasoning with salt and pepper.
  • Spread half of the sun-dried tomato pesto on top of the potatoes.
  • Sprinkle half of the shredded cheddar cheese over the pesto.
  • Repeat layering with remaining potatoes, more salt and pepper, remaining pesto, and remaining cheese.
  • Pour chicken or vegetable broth evenly over the layered ingredients.
  • Cover the dish with aluminum foil and bake for 1 hour and 30 minutes.
  • Uncover and bake for an additional 15 minutes until golden and bubbly.
