- 1 1/2 cups strawberries, roughly chopped
- 2 tsp cornstarch
- 2 tbsp sugar (adjust based on berry sweetness)
- 2–3 tbsp water
- 1.5 cups Marie biscuits, crushed
- 1/2 cup butter, melted
- 2 cups cream cheese, softened
- 3/4 cup sugar
- 3 eggs
- 1/4 cup heavy cream
- 1/4 cup all-purpose flour
- 1.5 tsp vanilla extract
Instructions
- Blend strawberries, sugar, cornstarch, and water to make a smooth purée.
- Cook the purée in a saucepan over medium heat until thickened.
- Preheat the oven to 350°F (180°C) and prepare the springform pan.
- Mix melted butter with crushed Marie biscuits and press into the pan.
- Bake crust for 10 minutes, then reduce oven temperature to 320°F (160°C).
- Beat cream cheese and sugar together in a mixing bowl.
- Add eggs one at a time, mixing in heavy cream, flour, and vanilla extract.
- Pour half the batter over the crust, add strawberry sauce, and top with remaining batter.
- Swirl remaining sauce into the batter for a decorative effect.
- Bake at 320°F for 50-55 minutes until slightly wobbly.
- Cool in the oven, then refrigerate overnight before serving.
