  • 1.5 cups Marie biscuits, crushed
  • 1/2 cup butter, melted
  • 2 cups cream cheese, softened
  • 3/4 cup sugar
  • 3 eggs
  • 1/4 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1.5 tsp vanilla extract

Instructions

  • Blend strawberries, sugar, cornstarch, and water to make a smooth purée.
  • Cook the purée in a saucepan over medium heat until thickened.
  • Preheat the oven to 350°F (180°C) and prepare the springform pan.
  • Mix melted butter with crushed Marie biscuits and press into the pan.
  • Bake crust for 10 minutes, then reduce oven temperature to 320°F (160°C).
  • Beat cream cheese and sugar together in a mixing bowl.
  • Add eggs one at a time, mixing in heavy cream, flour, and vanilla extract.
  • Pour half the batter over the crust, add strawberry sauce, and top with remaining batter.
  • Swirl remaining sauce into the batter for a decorative effect.
  • Bake at 320°F for 50-55 minutes until slightly wobbly.
  • Cool in the oven, then refrigerate overnight before serving.
