  • 1 TBSP Cornstarch
  • 24 oz Cream cheese, room temperature
  • 3/4 cup White granulated sugar
  • 1/2 cup Sour cream, room temperature
  • 1/4 cup Heavy cream, room temperature
  • 1 tsp Pure vanilla extract
  • 4 Large eggs, room temperature

Instructions

  • Preheat the oven to 325°F (163°C).
  • Prepare a 9×9 inch pan with non-stick spray and parchment paper.
  • Mix graham cracker crumbs, brown sugar, and melted butter in a bowl.
  • Press the mixture into the prepared pan and bake for about 12 minutes.
  • Combine strawberries, granulated sugar, lemon juice, water, and cornstarch in a saucepan and cook until thickened.
  • Beat cream cheese and sugar on high speed, then add sour cream, heavy cream, and vanilla.
  • Incorporate eggs slowly, mixing until just combined.
  • Pour cheesecake batter over the crust and bake for 35-40 minutes.
  • Cool the cheesecake, refrigerate for at least 6 hours, then add chilled strawberry sauce before serving.
