  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/2 cup dark brown sugar
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika

Instructions

  • Preheat smoker to 275°F.
  • Let turkey reach room temperature for about an hour.
  • Remove turkey from packaging and clean out the cavity.
  • Spatchcock the turkey by cutting along the backbone and flattening it.
  • Pat turkey dry and season with the sugar mixture and salt.
  • Place turkey in the smoker breast side up.
  • Smoke for 3–4½ hours until internal temperature reaches 160°F.
  • Let turkey rest covered with foil for 15 minutes.
  • Slice and serve to guests.
