- 10–12 pound whole turkey, thawed
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/2 cup dark brown sugar
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
Instructions
- Preheat smoker to 275°F.
- Let turkey reach room temperature for about an hour.
- Remove turkey from packaging and clean out the cavity.
- Spatchcock the turkey by cutting along the backbone and flattening it.
- Pat turkey dry and season with the sugar mixture and salt.
- Place turkey in the smoker breast side up.
- Smoke for 3–4½ hours until internal temperature reaches 160°F.
- Let turkey rest covered with foil for 15 minutes.
- Slice and serve to guests.
