- 1 lb. Mezzi Rigatoni (or other short cut pasta)
- 2 tablespoons olive oil
- 1 yellow onion, diced
- 13 oz. beef smoked sausage link, sliced into semi-circles
- 2 cloves garlic, minced
- 14.5 oz. petite diced tomatoes (1 can)
- 1 lb. asparagus, trimmed and cut into ½ inch pieces
- 1 teaspoon dried basil
- Salt & pepper to taste
- 1 cup chicken broth
- 1 tablespoon all-purpose flour
- ¼ cup heavy cream
- Shredded parmesan cheese for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil.
- Heat olive oil in a skillet and sauté onions until translucent.
- Brown the sliced sausage in the skillet.
- Cook Mezzi Rigatoni in boiling water until al dente.
- Add asparagus and garlic to the skillet, cooking until fragrant.
- Combine diced tomatoes, cooked asparagus, and seasonings in the skillet.
- Whisk chicken broth and flour, then add to the skillet and boil.
- Stir in heavy cream and adjust seasoning as needed.
- Toss cooked pasta with the sauce until well-coated.
- Serve hot with shredded parmesan cheese if desired.
