Ingredients

  • 1 lb. Mezzi Rigatoni (or other short cut pasta)
  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 13 oz. beef smoked sausage link, sliced into semi-circles
  • 2 cloves garlic, minced
  • 14.5 oz. petite diced tomatoes (1 can)
  • 1 lb. asparagus, trimmed and cut into ½ inch pieces
  • 1 teaspoon dried basil
  • Salt & pepper to taste
  • 1 cup chicken broth
  • 1 tablespoon all-purpose flour
  • ¼ cup heavy cream
  • Shredded parmesan cheese for garnish (optional)

Instructions

  • Bring a large pot of salted water to a boil.
  • Heat olive oil in a skillet and sauté onions until translucent.
  • Brown the sliced sausage in the skillet.
  • Cook Mezzi Rigatoni in boiling water until al dente.
  • Add asparagus and garlic to the skillet, cooking until fragrant.
  • Combine diced tomatoes, cooked asparagus, and seasonings in the skillet.
  • Whisk chicken broth and flour, then add to the skillet and boil.
  • Stir in heavy cream and adjust seasoning as needed.
  • Toss cooked pasta with the sauce until well-coated.
  • Serve hot with shredded parmesan cheese if desired.
