- 1 small onion, chopped
- 2 stalks celery, chopped
- 2 large carrots, cut into chunks
- 2–3 cloves garlic, sliced
- 1 tablespoon fresh rosemary, chopped
- 3 lbs (1.5 kg) stew beef or cut-up shin/brisket
- 1/2 cup (125 ml) dry red wine (e.g., Chianti)
- 2 cups (500 ml) tomato passata or crushed tomatoes
- 1 1/4 cups (235 g) cannellini beans, drained and rinsed
- 6 canned or frozen artichoke hearts, halved
- 1/2 cup (90 g) olives, pitted
- Salt, to taste
Instructions
- Chop onion, celery, carrots, and garlic, and prepare rosemary.
- Layer the chopped vegetables and garlic in the slow cooker.
- Season beef with salt and place it on top of the vegetables.
- Add cannellini beans, artichokes, and olives.
- Pour crushed tomatoes and red wine over the ingredients.
- Cook on low for 8-10 hours.
