  • 3 lbs (1.5 kg) stew beef or cut-up shin/brisket
  • 1/2 cup (125 ml) dry red wine (e.g., Chianti)
  • 2 cups (500 ml) tomato passata or crushed tomatoes
  • 1 1/4 cups (235 g) cannellini beans, drained and rinsed
  • 6 canned or frozen artichoke hearts, halved
  • 1/2 cup (90 g) olives, pitted
  • Salt, to taste

Instructions

  • Chop onion, celery, carrots, and garlic, and prepare rosemary.
  • Layer the chopped vegetables and garlic in the slow cooker.
  • Season beef with salt and place it on top of the vegetables.
  • Add cannellini beans, artichokes, and olives.
  • Pour crushed tomatoes and red wine over the ingredients.
  • Cook on low for 8-10 hours.
