- 1 pound lean ground beef
- 1 small onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 ounce chili seasoning (1 packet)
- 3 cloves garlic, minced
- 4 ounces diced green chiles (1 can)
- 15 ounces chili beans (1 can, undrained)
- 15 ounces black beans (1 can, rinsed and drained)
- 29 ounces tomato sauce (1 can)
- ½ tablespoon cornstarch
- ½ tablespoon sugar
- 2 cups cheddar cheese, shredded, divided
- 9.25 ounces corn chips
Instructions
- Brown the ground beef in a medium skillet and drain excess fat.
- Combine browned beef with onion, bell peppers, chili seasoning, garlic, green chiles, chili beans, black beans, tomato sauce, cornstarch, and sugar in the slow cooker.
- Cover and cook on low for 4 to 6 hours.
- Stir in 1 cup of cheddar cheese a few minutes before serving and allow it to melt.
- Top with corn chips and remaining cheese; cover until melted.
- Serve with corn chips and your favorite toppings.
