  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 ounce chili seasoning (1 packet)
  • 3 cloves garlic, minced
  • 4 ounces diced green chiles (1 can)
  • 15 ounces chili beans (1 can, undrained)
  • 15 ounces black beans (1 can, rinsed and drained)
  • 29 ounces tomato sauce (1 can)
  • ½ tablespoon cornstarch
  • ½ tablespoon sugar
  • 2 cups cheddar cheese, shredded, divided
  • 9.25 ounces corn chips

Instructions

  • Brown the ground beef in a medium skillet and drain excess fat.
  • Combine browned beef with onion, bell peppers, chili seasoning, garlic, green chiles, chili beans, black beans, tomato sauce, cornstarch, and sugar in the slow cooker.
  • Cover and cook on low for 4 to 6 hours.
  • Stir in 1 cup of cheddar cheese a few minutes before serving and allow it to melt.
  • Top with corn chips and remaining cheese; cover until melted.
  • Serve with corn chips and your favorite toppings.
