- 6 pounds red potatoes, washed and quartered
- 1 large pinch kosher salt
- 1 cup (2 sticks / 227 g) unsalted butter, softened
- 1 cup (120 g) heavy cream
- 2 teaspoons kosher salt
- ½ teaspoon black pepper
Instructions
- Fill a large pot with quartered potatoes and add a large pinch of kosher salt. Cover with water and bring to a boil.
- Once boiling, reduce heat and cook until fork-tender, about 25 minutes. Drain and return potatoes to pot.
- Lightly mash the potatoes, adding butter and heavy cream. Continue mashing until well blended.
- Stir in 2 teaspoons of kosher salt and ½ teaspoon of black pepper. Adjust seasoning as needed and serve warm.
