  • 1 shallot, diced
  • 2 garlic cloves, minced
  • 3 green onions, chopped
  • 1 lb. shrimp, thawed (peeled and deveined)
  • 2 eggs, whisked
  • 1 cup bean sprouts
  • 1/2 cup peanuts, chopped
  • 1/3 cup cilantro, chopped
  • Lime juice of 1 lime (optional, for serving)

Instructions

  • Whisk together brown sugar, fish sauce, soy sauce, rice vinegar, and chili paste in a small bowl.
  • Cook the pad thai noodles according to package instructions; drain and rinse with cold water.
  • Heat oil in a skillet, sauté shallot, garlic, and green onions.
  • Add thawed shrimp and cook until pink, then push to the side and scramble whisked eggs.
  • Combine cooked noodles, bean sprouts, and peanuts in the skillet; toss well.
  • Pour sauce over all ingredients and toss to coat.
  • Stir in cilantro and lime juice before serving.
