- 2 tbsp fish sauce
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 tsp chili paste
- 1 tbsp oil (vegetable or peanut)
- 1 shallot, diced
- 2 garlic cloves, minced
- 3 green onions, chopped
- 1 lb. shrimp, thawed (peeled and deveined)
- 2 eggs, whisked
- 1 cup bean sprouts
- 1/2 cup peanuts, chopped
- 1/3 cup cilantro, chopped
- Lime juice of 1 lime (optional, for serving)
Instructions
- Whisk together brown sugar, fish sauce, soy sauce, rice vinegar, and chili paste in a small bowl.
- Cook the pad thai noodles according to package instructions; drain and rinse with cold water.
- Heat oil in a skillet, sauté shallot, garlic, and green onions.
- Add thawed shrimp and cook until pink, then push to the side and scramble whisked eggs.
- Combine cooked noodles, bean sprouts, and peanuts in the skillet; toss well.
- Pour sauce over all ingredients and toss to coat.
- Stir in cilantro and lime juice before serving.
