- 1 lb. shrimp, thawed, peeled, and deveined
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/3 cup olive oil
- 2 tbsp red wine vinegar
- 2 tsp Dijon mustard
- 2 tbsp shallot, minced
- 1/4 tsp salt, plus more to taste
- Pinch of black pepper
Instructions
- Prepare the dressing: Whisk together olive oil, red wine vinegar, Dijon mustard, shallot, salt, and pepper.
- Cook the shrimp: Sauté shrimp with garlic powder and paprika until pink.
- Assemble the salad: Layer chopped romaine, hard-boiled eggs, bacon, shrimp, tomatoes, avocado, and blue cheese.
- Finish: Drizzle the dressing over the salad just before serving.
